Y'all this is seriously my favvorite recipe to make with a steak. Its so easy to make, your going to be so surprised!
What your going to need:
- Depending on how many people you are going to feed I cook a minimum of 2 potato for 2 people but it doesn't hurt to make an extra just in case you don't score enough filling.
- 3 tablespoons of butter
- 1 cup of shredded cheese
- ½ cup cooked bacon - chopped
- heavy whipping cream or milk
Directions:
1.Preheat your oven to 375 degrees.
2.Wash your potatoes thoroughly. Wrap each potato individually in a paper towel (don't worry about drying them after washing them).
3. Place your potatoes in the microwave on opposite sides of the turn table. Press the potato button on the microwave or cook them for 10 minutes.
4. Once potatoes are done, feel them to see if they feel soft. If they are they are done or you can replace them for 2 minute intervals until they are soft.
5. Slice your cooked potatoes in half length wise (Be extra careful to not burn your fingers from the hot potato or the steam that escapes the inside of the potato). Take one of the halves and begin to scoop out the insides of the potato with a spoon into a clean bowl. Do this for all halves. - Be careful not to scoop too close to the skin leave about ¼ of an inch of meat inside of the potato on all sides.
6. Pick out the best halves for the number of family members you need them for. Put some butter on the back of a spoon and run the insides of each half. Sprinkle a little bit of salt inside of each half. Place on a cookie sheet.
7. Put potatoes into the oven for 15 minutes until they are lightly browned.
8. While potatoes are browning take your small bowl of potato insides and put in your butter and a splash of heavy cream and some salt to taste. Begin to mash until creamy.
9. Once mashed creamy add your cheese, mix thoroughly. Then add your bacon, mix thoroughly. - This is where your extra potato can come in handy. If you believe you will not have enough filling to put into your potato skins peel and mash your extra potato and add to your bowl - add additional heavy cream, butter, and salt as needed.
10. Once potato skins are browned to your liking pull them out of the oven. Take a spoon and scoop your potato filling into each half. I will usually have some extra that I put into a piping bag with a large tip and pipe decorative designs on the tops of the potatoes.
11. Once your potatoes have been filled to your desired amount place them back in the oven for an additional 15-20 minutes or until the tops have browned.
12. Once browned pull out the potatoes and serve immediately. Enjoy!
OPTIONAL: I like to add a sprinkle of shredded cheese to the top of each potato before i serve them.
