Its school time! Which means its the perfect time to break out the crockpot dinners! Here is one to start in your rotation
What you need:
2 pounds boneless, skinless chicken breasts, sliced into thin strips
3 large bell peppers, sliced
1 large onion or 2 small onions, sliced
15 ounces diced tomatoes or salsa
1/3 cup fajita seasonings (see below for homemade blend)
Salt & pepper to season the chicken
Homemade Fajita Seasoning
2 tablespoons chili powder
1 tablespoon cumin
1 1/2 teaspoons salt
1 teaspoon pepper
1 teaspoon oregano
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Lets get started:
Season the chicken with salt & pepper. Add the chicken & all the other ingredients to the slow cooker. Stir to mix well.
Cook HIGH 1-3 hours or LOW 3-4.
