What you need:
Quickest way to prepare:
2 cups of minute rice prepared to the box instructions
Frozen chicken nuggets prepared via air fryer or oven
Chicken:
1 cup cornstarch
6 cups oil for frying
1 tablespoon salt
2 tablespoons oil
2 pounds skinless chicken thighs
1 teaspoon white pepper
1 egg
3 cups flour
1 1/2 cups water
1 tablespoon Oil
1/4 cup Orange Juice
1 tablespoon minced garlic
1/2 teaspoon ginger
2 tablespoons cornstarch
1 teaspoon sesame oil
1/4 cup sugar
2 tablespoons water
1/4 cup brown sugar
2 tablespoons soy sauce
1/4 cup distilled vinegar
OPTIONAL: 1/4 teaspoon chili flakes
sesame seeds
Preparing Chicken:
1. On a cutting board cut chicken into 1"x1" cubes and set aside
2. In a medium sized mixing bowl combine salt, white pepper, cornstarch, and flour - Whisk to combine
3. add egg, water and coil until it reaches the consistency of pancake batter.
4. add to the chicken to the batter and refrigerate for at least 30 minutes.
5. Heat oil in a wok or heavy bottomed pan to 350 degrees,
6. Gently add the chicken and cook for 5-6 minutes until lightly golden brown.
7. Remove chicken from the pan and transfer to a paper towel lined plate
Creating the sauce:
1. Set heavy bottomed pan on medium- high heat and add oil.
2. Once oil begins to simmer, add ginger and garlic. (add in the optional chili flakes if you wish as well) Cook for 30 seconds, stirring constantly.
3. add sugar and brown sugar, and stir to combine.
4. add in the orange juice and allow the sugars to begin to dissolve in the liquid, stirring occasionally.
5. add in the vinegar and soy sauce, and stir to combine.
6. in a small separate bowl combine cornstarch and water. Once dissolved add it to the pan and stir.
7. Continue to cook the sauce until maple syrup consistency is achieved.
8. Add in the chicken pieces and stir until completely coated in the sauce.
9. top with sesame oil
Plating:
Place healthy scoops of rice in each bowl.
Spoon Chicken and Sauce over rice.
Top with a little bit of orange zest and sesame seeds.
